Cioppino

Ingredients:
2 Cups of oil
4 Lbs. Leeks
1 lb. Onions (approx. 6)
1 cup Garlic (chopped)
1 Bottle of red wine
3/4 Gallon Sauterne cooking wine
2 cans Diced Tomatoes
1 can Tomato sauce
1/2 Bottle of Tabasco
25 Bay Leaves wrapped in cheesecloth
3 cups Parsley
3 Tbsp. Thyme
3 Tbsp. Oregano
1 Tbsp. Black Pepper
1/4 cup Salt
1/4 oz Saffron

Directions:
1. Using a stock pot: sauté the onions and leeks with all spices for 5 minutes.
2. Add the Sauterne and the red wine.
3. Bring to a boil.
4. Simmer for 5 minutes.
5. Add the diced tomatoes, tomato sauce and the Tabasco sauce. Pour evenly into 3 stainless steel soup insert pans.
